A porter wearing traditional flat-topped bobbin hat and overalls pulls his loaded barrow through the street outside Billingsgate Market in the early morning. He is moving fish from delivery vehicles to the merchants' stands on the trading floor, a task known as 'shoring in' in reference to the old practice of carrying fish ashore from boats once moored at Billingsgate Wharf.
