He is moving fish from delivery vehicles to the merchants' stands on the trading floor, a task known as 'shoring in' in reference to the old practice of carrying fish ashore from boats once moored at Billingsgate Wharf. Another porter carries a load on his traditional flat-topped bobbin hat.
